What gauges should I get

I'll add in a modified 4th choice:
If you don't have a smart phone, you can pick up a pretty cheap Android Tablet -- nice if does BlueTooth, but Wifi or hard wired will work. 7" screen ones around me are in the $50 range. You'll need to set up an account with Google (GooglePlay Store) or Amazon to purchase the "Pro" version of Torque ($4.95), and then buy an ELM 327 V1.5 ODBII adaptor module (plugs into the port on the bottom of the dash above your right knee) -- just make sure it has whatever connection type your Droid Tablet can use (hardwire USB, WiFi, BT) -- you can find these cheap on eBay, amazon, etc. in the $10 - $20 range Do NOT install any software that comes with that ODBII Module (lots of reports of malware).
When you load up Torque, be sure to also load the Ford Extended PID set. Sum total of option 4 is maybe $75? And it is waay cool. You can set up the gauge types on a number of screens and also data log your trips for later analysis, check for error codes (and clear them), set alarms and more. One of my recent favorite gauge types is the half dial Meter type -- it is very easy to glance at and see what a given gauge reads (graphically - also has digital readout) and automatically tracks highest and lowest value, as well as leaves a little mark on the gauge for latest high/low.
