2013 Holiday RECIPE thread

Got a good'n for Thanksgiving, Christmas, and so on?

*Main course, desert, or even drinks like 'Hot Toddies' & such.

Let's share those treats....

TEXAS style English Muffins

4 1/2 cups flour
1 1/2 cups water
1 packet of yeast
1 TBSP sugar
1 TBSP salt
1 TBSP butter, margarine, or ghee (can use other options - it's to grease the pans)
Garlic (optional)
Chili powder or Jalapenos (optional)

*You will need a pair of 9 or 10 inch cake pans, and 3 clothespins to clip them together.

Mix salt, flour, and seasoning options in a large bowl
Mix water, sugar, and yeast in a large measuring cup and let the yeast "PROOF" itself in a warm place.
Set pans in the oven with half each of the butter in them, set oven to lowest temperature and let warm - then shut off oven
*This step melts the butter so the pans can be treated, and also warms the oven for the dough to rise

Mix yeast and water with the flour - adding flour if necessary until you have a barely sticky, soft elastic dough.

Place dough in one of the pans, and press out until it fills the pan like a pizza crust.
Place the other pan UPSIDE DOWN on the pan of dough, and clip the edges in three places with clothes pins.
Place in oven to rise and fill the pans as fully as possible (maybe 45 minutes)

Bake at 325 F for about 25 to 30 minutes

~When done, let cool. Then lift off top pan, turn over onto clean cutting board, and slice exactly in half through the middle..

**VARIATION**
Add a packet of cheese sauce powder from a box of Mac & Cheese to the dry mix to make a cheese muffin!
You can add two drops of yellow, and one or two of red food coloring to give it a cheery Cheddar Cheese wheel appearance

The result is a dinner plate sized French Bread Muffin, that can be toasted to the consistancy of a giant English Muffin...
I love these things in the morning, with sausage and eggs, or just plain toasted and buttered!

I was thinking about making "Breakfast Pizza's" when I figured this out




QUICK APPLE JACK
1 gallon sweet white wine
1 or 2 frozen apple juice concentrate tubes (frozen juice section of the store) ~You can also use Cider instead
*Each of them makes 2 quarts
Cinnamon powder
Sugar, to taste

Reconstitute frozen apple juice in a two gallon container, and bring to a boil with about two or three TBSP of cinnamon powder in it, you want it strong or at least spicey.
Turn off heat as soon as bubbles begin to come up
Let it cool, and combine into a punch with wine.

Can be served warm or chilled

Add sugar to taste - it probably won't need it.

Chablis works well for this

Options include Ginger and Allspice

*Most of the Cinnamon will settle to the bottom, pour slowly into another container, or dip out with a ladle

This is a GREAT idea.....and I keep forgetting to pull out some tasty recipes. Soon....very soon.
