Wheel Choice 17" or 18"?
Here are the three wheel choices I was looking at:
Pro Comp 5001 18x9.5 Offset -19 Backspace 4.5" Max Load 3420
Pro Comp 7069 17x9 Offset -6 Backspace 4.5" Max Load 3420
Dick Cepek DC-2 18x9 Offset -13 Backspace 4.5" Max load 3400
Dick Cepek DC-2 17x9 Offset -12 Backspace 4.5" Max load 3400
I like the Pro Comp a little better than the Dick Cepek because they are all black.
Tire Choices for 18" Wheels:
Nitto Trail Grappler M/T LT295/70/18E or 35x12.50x18E
BFGoodrich All-Terrain T/A KO LT325/65/18E
GoodYear DuraTrac LT325/65/18E
Now I wanted to know why only Nitto makes "E" tires for both 17" & 18" wheels?

Why not BFGoodrich or Goodyear?
Is it ok to run "D" rated tires on a Super Duty?

I'm planning on 18" wheels because tires seem much more available for them. 17" tires seem to be going away just like the 16.5" ones have. Not to mention that you have to be careful with aftermarket 17" wheels on the 2005+ Super Duties because I've been told some of them won't fit over the brakes.
As far as the D vs E rated thing goes, theoretically if the tire rating is as high as your axle rating (or as high as you will ever load your truck) you should be fine. However, I remember people on here complaining about D rated tires feeling to "squishy" going around corners because the sidewalls flexed too much.

The extra inch of width will show more and probably look better if the wheels are spaced further out (the ones you chose might be, I've never seen set). The narrower ones look less beefy, but I wanted a cleaner "under the truck look", that's why I sucked the rims and tires back under with this set.
35x12.50s on 17x9, -8mm:
