1997 ford 350 v8 460
I have a 1997 F 350 with a 460 cubic inch engine. Just redid the valves it also had a bad head gasket. Assembled it. It started fine, idles great but run it up to 35 miles per hour and it bucks and back fires. Had a vacuum gauge on it while running the vacuum rightly so drops and then picks up again. Is it the fuel or ignition?

Not likely with this hold-over, most of these were over 8500lb GVWR which means it's OBD-1.
Agreed on that.. the codes will tell you if you forgot to plug in a sensor for example, I did that on the last truck I worked on and running the codes saved me a lot of time. Other possibilities are ignition related, you could have the distributor off a tooth or a couple plug wires could be cross firing or arcing to the motor, and it could be fuel pressure related. But if the truck had no sensor or fuel problems before the repair then it's most likely something simple.
