Hey everyone! Thanks for all of the advice and tips.
Nothing is really set in stone, except for things like the power breaks and air conditioning, which are not really creature comforts when you live in a place where there are terrible drivers and the weather gets to 100 degrees before noon on a good day. All in all, this will be a work in progress, and I'll be doing research and considering my options. I know my dad loves the flat heads, and I like them too, but if that's not the best thing for what I need, then I'll have to convince him to part with it, sadly.
As for driving, I have never really had lessons or much experience (except for when I somehow dented one of my dad's older truck's bumpers: in the middle of an empty parking lot), so I am pretty much a clean slate for learning clutches and all that. And I'm much more confident than when I was fifteen so I hopefully won't destroy anything.

One thing you'll never have to apologize for is a learning curve. I'm sure I could dent a car in an empty parking lot. I just seem to have those kind of skills.
I wish my truck ran when I got it so I could have done like a lot of these guys and just drive it so it can let you know what you need to fix/replace/upgrade. I hauled mine, less engine, home from the junkyard for $700. Just have fun with it.
