Depends on how much you want to spend Corey, and what you plan to use the bike for. I'm a Harley fan, but there are a ton of other options for less money. I've got a touring bike, and it gets in the mid 40's for gas mileage. I got around 50mpg with the Fatboy I had before. I'm sure a Sportster would be pretty good on gas too. I think Micah rides a Sportster, so he can probably give you some advice on that one...
I was disappointed in the Yamaha Vstar I had, it only got about 36mpg, and was only 1100cc's. But it was carburated and not fuel injected. A Vstar 1300 has fuel injection and is liquid cooled, so it would do better.
Not sure how the sport bikes are on gas, but you can get where you're going in a hurry.

Best thing to do, in my opinion, would be to take the Motorcycle Safety Foundation beginning rider course. It's usually offered through a local community college. Or, Harley offers what they call Rider's Edge through some dealers. Of course, since Harley's name is on it, it costs a lot more money than the community college. Either way, they provide a bike, and have a range set up in a parking lot so it's a hands on course. The bikes are typically 250cc, and pretty easy to manuever.
Starting out for the first time on a bike, I would stick with something in the 650 - 900 cc range... There are usually a ton of affordable options in that range, even some of the 883cc HD Sportsters can be found pretty cheap.
