unless you are trying to change the setting after the tune is loaded, you are doing nothing wrong ...
go back to stock, then reload the tune, but change the parameters before reloading...
all enhancements to the tunes on my sct's have been pre-tune load...
OR if you are doing it correctly,
sounds like the tune is not quite right for that feature - go back to your tuner and ask them to correct....
My truck shifts nicely....obviously depends in what gear and RPM you are in, but there are times it has gone into detent hard, but that is because I really mashed the pedal and it went from 4th to 2nd......other than that....smooth
Now I was wondering, by changing these parameters what exactly am I accomplishing? Speedo correction, better performance.....?

No speedo correction but it will provide correct speed input for proper shifting at the points the tuner intended. Also, if you have the insight, you can monitor speed. Before the tuner, my speed via the insight was 70 mph and via my gps was 73 mph. After the tuner with rev/mile correction, my speed via the insight matches the gps at 70 mph. Not sure if the odometer gets its input from the same source as the speedo or the source as the insight, but it may also correct the odometer.
