pulling my hair out! rough after an easy start

got a 2000 F350 7.3 psd. 105k. starts find at 30 degrees but after taking off about a half mile down the road, when you start to give it a decent amount of throttle it is like it "overloads a carb or something floods" i know diesels dont have carbs, just giving the closest example i can think of. if you leave plugged in overnight usually doesnt do it. no noticeable smoke. usually does it after sitting a few hours. when temps are cooler, but not cold. have owned other diesels in the past, nbever had this issue. have had this truck all winter, only last month or so has this issue arrived. Might be oil related.. since it runs better if you plug in the engine heater.. What oil are you using and how many miles on the oil. ?

Check your oil level not only with the dipstick, but the HPOP level as well. If you are just a little low, and the oil is cold, it will have troubles building pressure to operate the injectors. The level should be about 1/2 inch from the top in the HPOP

High Pressure Oil Pump. It's what runs your injectors.

Remove the black plastic cover that covers your fuel bowl/filter housing.. Next to the filter housing is a somewhat square housing.. this is your hpop.. there is a fill/inspection screw with an allen type screw on top.. remove this to check the level with clean stick or screw driver.. it should be around one inch from the top.. check it after it been sitting for several hours..
I also suck this out when doing a oil change..and refill it.. it has nearly a quart of dirty oil. But, this is optional.
