I had a 2002 F 350 Super Cab Lariat with the 7.3. Great truck except for the ESOF which never worked when I needed it. Whoops. I was wrong about the Super Cab Lariat. Great news and I will check on the ESOF delete. Are the 2011 systems any better than what I had before?
also you should be able to answer your own question about the locking diff, right there in its name, Electronic locking differential. And yes you should be able to order the truck you want without the esof, although I have never had any troubles with using mine, 257k km's on it.

Well, ESOF stands for Electronic Shift On The Fly and it is a Vacuum system so I am wondering if the diff is the same.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-comfficeffice" /><o></o> <o></o> My ESOF worked when I first got the truck. The PO noted that he had the switch replaced. I didn't use the system for awhile and it became hit or miss whether it would engage and then it wouldn't at all.<o></o> <o> </o> There seems to be a lot of conversations here from guys having the same problem.<o></o> <o> </o> If it worked, I wouldn’t mind having it as I could then get the floor console.<o></o> <o> </o> Thanks.<o></o> <o></o>

Yes the hubs are vacuum operated, but the transfer case is electronically controlled, is it not? I do prefer the stick in the floor with auto hubs, makes life easier, not sure if selecting the esof delete gets rid of the auto hubs too? My old dirty dodge had it on the floor with auto hubs, made things simple
