Trouble installing U-joint

We own a AWD 2000 Explorer, XLT. I've replaced the rear U joint (near the differential) a few times. After I replaced the original joint, I drove it around the block and came back to find smoke coming from the new joint. Replaced that one with another new one and I constantly hear a rubbing noise (can't explain the sound).

I can't think of anything I did wrong. I used a vise to push the old ones out and the new ones in and greased them before using the vehicle. Anyone else have this problem before?

Did you disturb the alignment of the roller??

check the resistance on the u joint before installing the shaft, you may have then to tight(pushed in too far)

When pressing the caps in, how to you prevent that from happening, and is there anything that can be done once you've pressed them to far?

Yes,

Don't push them in too deep when installing, AND
gently back them out the same way you removed the originals.
