The Guy on the TV show was dealing with virgin oil and a very small batch.
When you start using WVO and running 30 - 50 gal batches heat just makes it run smoother: helps particles settle out, helps eliminate water contamination, speeds reaction time and reduces the amount oe reagents needed, etc, etc, etc.
