I don't see any reason why that wouldn't be possible...the 2.3 has always been an available motor in the Ranger. Your mounts and such should be a straight bolt-in right up to 1992. After that they changed the body style and I believe the frame was redesigned, though your motor would still work. My sister has a '93 with a 2.3 in it, though it's EFI rather than carbed.
As I recall the extended cab option was available on the Ranger beginning in '86.
