You are stuck with what you have. Your computer system is a speed density system, it's programmed to fuel the engine assuming everything is stock. It does not adapt to changes like the later ones...

Can you get it to a local parts store and let them check the codes? Apparently it has one or more, the reason for the check engine light. That might give a big clue to the problem.

Make a gasket out of thin aluminum or some sort of metal, slip it underneath the EGR to block it off, and see if the problem goes away. Your problem is intermittent, so this is probably the only way...

Just put the meter on the battery. With the truck off you should have a reading somewhere around 12v. With the truck running, if it's charging you will have something higher, 13.5v or higher.
