I also went with cutting off 2". This left 1" from the gravel pan. This 1" is very handy when you wash your truck to be able to wash the gravel pan and back side of bumper

I used a set of BBK 15150 ceramic coated shorty headers on my 302. Also I used the BBK 1510 H-pipe with a pair of magnaflow mufflers. My transmission is different from your 4R70W instead my is a C6.

Inside of rear fender to wall of bed is 11 inches. I went with 10 inch width tires, this leaves 1/2 inch of play on both sides of the tire that is if the wheel is centered correctly.
