I'd go 3.73 and when it's time, replace the 351 with a 460. Like others have said, 4.10 gears will have you relatively screaming at modern highway speeds.

And if you're set on doing it, swap in a D60 front axle and the rear blocks from a 350. You'll get a 2" lift just from that, and it will be way easier to add additional lift with the SAS.
