Bigger tires with cutout flares would be better. Same axle clearance with lower CG. Hell, even cutouts with 37s would be better, room for wider tires on those dunes.

pH and additive concentrations aren't in the correct ranges without the proper coolant/water mix. Running straight coolant is pretty foolish, though possibly better than adding tap water.

It definitely shouldn't be doing it on long highway trips, only short cold trips. Most likely the fuel pump seal or bad injector.

How quickly did the oil level rise? Getting that much fuel in the oil is usually a bad seal on the high pressure fuel pump under the valve cover.
