In a full size pickup, I'd go with a roller 351 before building a 302 based stroker. You can find these in many 95-97 pickups an vans for way less than you'll spend building a stroker

Felpro makes this gasket too. The newer steel covers have thicker flanges to utilize them, the older covers do not.
