Your brakes may be getting a film of rust on them(the rotors) when sitting in damp humid weather and it takes a couple of braking actions to shine them up again.

I replaced the 351m in 78 F150 with a 460 and reused the radiator as a test and didn't have any overheating issues but I didn't pull or haul a lot of heavy loads.
