On the bright side my wife was working in town and a lady called and said would you like some Elk? Of course she called me right away and I was off. She was hunting with rifle and bagged and elk and her husband did the same. She had half an elk that had to go, we split it with another family. The back strap and the tenderlions were still in the half when we got it. A little bit of butchering on the kitchen table and in the freezer she went.. All nice an legal with a transfer document to boot.

Next year I'm getting another elk of my own, of course I have two beef cows that are growing onthe front field and the wife is talking about having the vet check the female to see if she can have babbies if so, bing more beef, no room in freezer room for elk.x(

I raise my own beef also, but if I have a chance to put more Elk in the freezer the beef get's given away! Nothing beats the taste of Elk........

You are oh so correct, I love the taste of elk. We ate elk pretty much through the winter of last year, and then switched back to beef man what a taste difference.
