Oddly enough I picked up two three pound bricks of extra sharp at the commissary on base this evening on the way home. They were five bucks each.

Also plenty of beer...

Ever wrap cheese in cloth and let it dry in the fridge until it becomes "HARD CHEESE"? That stuff is the absolute best....

It takes a long time, unless you chunk it first into one inch square sticks.

That's why you dry it in the reefer - so it won't.

My dad was a pennsylvania Kraut, and he did that a lot. Want to see a man PO'd? Snag the hard cheese he has been watching for three weeks....

OMG!

Alternately - you can slice it in slabs an inch thick. It dries faster as a stick though.
