Sounds good Tim. Been awhile since I have done that. I am getting everything together to start making my own sausage at home. Have the seasonings I need, as well as the sausage stuffer. Just gotta get the casings.

Not sure yet. Just doing my research at the moment before I start going. Will be making a few kinds. I am going to make some italian sausage and probably some breakfast sausage. I am making sure I have done my research before even trying. Better to know what I am doing before trying it and screwing it up. I can always tweak recipes as I go.

I havent done it before either Tim. I know some of the suasage I am going to smoke on the smoker. We can regulate the temp pretty low Lowest I can go is at least 160*.

Might try some applewood as well as hickory for some. Mesquite would overpower the seasoning in the sausage.

Thats true. Mesquite is good for steak and chicken. I dont like mesquite with pork personally.

I dont even use it on pork. It s great with any beef that I would be smoking. I prefer any fruit wood like peach or apple. Even Pecan wood for pork. Lighter flavor that enhances the flavor of the pork.

The game plan for me and my brother is to make some pork sausages first before getting into anything else.

Probably not to start with. When we are ready to start we just want to get our technique down good and then worry about getting fancy with everything, It will be the first time for us both to make sausage. So get the basics in good and then get fancy with everything. -
