Where to camp in Colorado?

Taking a family road trip across the country, jobs relocating me to the East coast. Were starting out in LA and headed to Wisconsin and then continuing our trek to the east.
Anyway were planing on scooping up a pop-up camper somewhere between LA and vegas and seeing the country the right way. Never been to Colorado but all I've seen and heard has been amazing. I'm looking for any places that are MUST see or go to. I've been looking through the Good Sam Book and have an idea. Probably taking I70 in though Grand Junction and going through Denver. Nothing but time to do the trip so detours are welcomed.
What campgrounds do you suggest? Dream campground would give me a site i could fish from!

Thanks for the tips!
