No damage around my house...just some localized flooding in some small creeks, etc...my back yard looks like a lake...could have sworn I saw a Bass jump earlier...

Good morning Alabama, Steve, Caleb and Pat. The barbecue is started. I am trying apple wood chips for the smoking part. I got 2 3/4 inches of rain yesterday and early this morning.

Caleb, up near Huntsville. Yeah, Steve, I have two Boston Butts, a Hollywood rib and a small piece of beef. I have about 14 pounds of meat smoking.

The barbecue I made a couple weeks ago came out really good. Hope this is as good.

About 10 hours for the butts.

so you take out the smaller pieces earlier?

No, I start them later so they all finish at the same time. The last three hours they cook wrapped in foil with some of the baste for moisture and extra flavor.

Then I let them rest for about a half hour before we eat.

Morning Steve. I use apple when I smoke ribs and brisket. I'll toss in a little hickory just for good measure also.

That sounds good Pat. I may add a bit of Hickory later.

I just toss some in for a little variance in the flavor. I need to get some smoking done, now that the weather is nice!
