If it were me, I'd find the wire going to the PCM from the coolant sensor, and see exactly what it's seeing, in terms of voltage. A disconnected coolant sensor usually shows very low temp, like -40 degrees in the case of my 4.6L. The super-high temp means it's either shorted directly to ground(+12?) or the PCM input circuitry is bad.

You can print them out, or save the images to your local computer.
