depending on how nice you keep your ride and how nuch you want to spend...... duplicolor makes interior dyes that work nice. I recently dyed an airbag and steering column covers to match (wifes Mustang) and it looks great. I do suggest coating the entire surface and not just touch up spots. so, if masking other areas is not possible then this may not be an option.
Another option depending on the scratch locations is a dash kit. These stick on over the paint. Ebay has a ton of them, and most sellers let you buy individual pieces.

Are you talking about the flat grey paint on the dash ond console sides? if so i repainted the sides of my console becaause they were scratched up. I used a Duplicolor paint from a local auto parts store. It was very close in color but a bit shinier. Probably wouldnt work for a touch up but if you decide to paint the entire grey area i think its a good choice. let me know if you want the paint #.
I had that problem with the silver bezel around the shift lever, and bought a new bezel from ford for a few bucks. I would check the parts guys, some of that interior trim is not very expensive.
