Mine always ran just under the halfway mark on the gauge, right around the "O" in "Normal" after I switched to a later 4.0 radiator. Before that it was a bit on high side of normal with the A/C on.
You want to be running a 195º thermostat, and hopefully your engine will operate at right around that temp, a little higher is okay but of course with a 2.9 with its very crackable heads you don't want it to get too hot.
