Can someone tell me if it's possible to hook an amp and truck speakers up to a stock stereo in a 1997 F150? Before I tear the dash apart, I want to be sure it's possible to do...don't know if there are RCA jacks or not? Thank you!!

It is possible and there are two ways to do it. one being to use an amp with speaker level inputs. The better choice is to get LOCs (Line Out Converters) for each pair of inputs you need. LOCs convert the speaker wires to RCAs and give you a gain control.
A nice way to do this is to get both side harnesses (radio and vehicle), splice them together and tap out what you need. You can leave the speaker wires loose and extend them to the output of your amp on the speaker side, then use the radio side to wire in the LOCs. making a nice plug and play install.
I did this with my CD6 and wasn't happy with the sound quality in the end. Do yourself a favor and just replace the stock head unit first, then you probably won't even need an amp.
