Why is it that when you take your foot off the gas the engine goes quiet for a few seconds. Then makes the diesel sound again?

 

Maybe a case of identity confusion... a gasser in a diesels body.

Have you tried counseling

 

No fuel is being injected or a lot less anyway...

It's just the injector system defueling since the engine isn't working. Since you don't have a throttle like a gas engine, the injectors just greatly reduce the amount of fuel that's being pumped into the engine, thus the lack of sound until the demand catches up.
