Hi from the frozen (or soon to be frozen) north! It looks like you guys have a pretty good handle on what it takes to get a big block in where a 351m/400 used to be. I swapped a 460 into my 78 Supercab a while back, except I have a 4 speed. It should be a little easier with an auto, since Ford actually put big blocks in front of them in the earlier trucks. I would just like to mention that some of us are too cheap to buy all the parts to do this swap, so we find ways to make stock parts work. I had good luck with stock 1977 van manifolds, the van oil pan and homemade adapter plates to use 400 motor mounts. The manifolds give you good clearance, if you can live without the extra performance of headers. From my experience, I would use the motor mounts from L&L if I were to do it again, just to save some grief. The only other thing I would mention is to make sure you know if the big block you use is internal or externally balance and use the correct flywheel/flexplate. I have driven my truck many a mile since I put the 460 in and even done fairly well in some truck pulls.
