If you're using the dipstick as an indicator for how much oil to put in, you're putting in too much oil if you're filling to the full line. You're putting well over 7 quarts in if you have a 5.4 or well over 6 quarts if you have the 4.6.

As per my 2007 Owner's guide, page 322:

If the oil level is between the lower and upper holes or between
the MIN and MAX marks (depending on application), the oil
level is acceptable.
If it's "acceptable"...then it can't be "too much!" As long as you don't fill it over the hash marks, it won't hurt a thing!

If you're filling to the upper hole/add mark, you're putting in more than 7 quarts. That same manual you quoted from calls for 7 quarts or 6.6 liters, as per the specifications on oil for the 5.4. Therefore, you're putting in too much.
For those not adding the specified amount by filling to the full line, I agree, you won't kill the engine, however, they're still putting in the wrong amount.
In my book, yeah, that's "too much" . Just because it's "acceptable" doesn't mean it's proper.
Would you feel comfortable running your truck with the oil level a hair above the add mark, because it's still acceptable?

Yup...because it's within the operating range of the engine. Same with antifreeze, there's a minimum and a maximum...within that range, you should be fine.

If there was an exact amount needed for the engine to perform properly, there would be one line on the dipstick, not an "acceptable range".

Yup, "should be". Acceptable range allows for error. If you prefer the limits of what's acceptable, all power to you. I'll stick with operating an engine with the proper specified amounts.
I guess you save money on anti freeze and oil by adding the bare minimum since it's acceptable.

I use Pennzoil synthetic and change the oil every 5000 miles. I now have 27000 miles and the truck has never used a drop of oil that I can tell. Had a 2000 Expedition that I put Amzoil in. I was using a quart every 1000 miles. Switched back to regular oil and it did get a little better. I then gave up and got rid of it. I do not buy the fact that an engine should use a quart every 1500, that's not right.

My F150 and my Mazda 6 did the same thing. Ask the dealer about it and they said it was normal. A buddy that I work with had the same thing happen to him on his new F150 5.4L as well.

Running the oil a "little" overfull is perfectly acceptable, especially if it slowly consumes oil.

As for consumption, my bro's 07' also seems to be about 1qt/5000miles
