It's difficult enough, that when the tranny was apart to replace the syncros I woluld go ahead and get the whole thing rebuilt. One thats already rebuilt, or a decent one out of the wrecker may be a better option too.

You don't have to grind the gear. Just double clutch it like you would a big truck with a transmission without syncros.
When shifting from 3rd to second, when the tranny is in neutral, let your foot off the clutch and rev up the engine, then throw out the clutch and when the RPM of the engine matches what it should be running for second gear, it will slip right in, without grinding. If you haven't done it before it takes practice, but it will get you by until you can fix it. Or you can double clutch it forever until something else breaks in the tranny or something else wears out.
