I have somewhat of the same symptoms.. I purchased my truck last year in the summer time used and every once and a while the cooling fan would come on. Mainly when you were stopped at a light and accelerating. It also would come on when pulling. It would come on for about 1 minute and go off. I get the 'whistling' noise coming from my degas bottle under normal load, and the truck uses some coolant. I have to put a gallon in about every month or so. I don't have any signs of white deposits on the bottle.. I'm kind of torn whether its the head gaskets or maybe a faulty EGR.. I'm going to do the EGR delete soon, I hope that will help me know..

Is it safe to ASSUME that if my head gaskets were done last year (by a ford dealer under warranty), that the dreaded heads will last and not blow again?

So far so good. I am starting boating season again..........

Like alot of things that depends. Main thing it depends on is if the repair was done correctly. You can still blow the heads even if it was done correctly and without a tuner(contrary to alot of popular opinions on the anti-tuner regime) just depending on how you drive. Now if you were to have studded the head and had correct installation and repair of the headgaskets then unless you start adding insane amount of horsepower(from by 600 on up) you should be fine with stock gaskets and new or machined heads and not have to worry one lick about them. If it was fixed with bolts then that concern should always be in the back of your head and determine on how you drive it(ie let it get up to normal operating time especially before you drive it like you stole it).

FYI:

Common Causes for Puking / Overheating
Thermostat
Coolant Temperature Sensor
Oil Cooler plugged or leaking
EGR Cooler leaking
Blown Head Gaskets
Clogged Radiator (air side)
Water pumps fins are split where they go around the shaft
They only spin for a while and when they get hot the spinning will slow down. An easy way to check for this problem is pull the hose off the degas bottle from the intake it should pump the same amount out hot or cold. This can make your engine puke if it is your problem.
Some suspect a collapsed radiator hose
Injector cup
Glow plug cup
Cracked head

ya..just drinking coolant, its dry under the hood, no smoke or anything.radiator cap looks clean
