Differential Fluid Change and check up

I was going to pull the differential cover off and take a look and check the condition of the rear end and also change the fluid out because it smelled like death but I can't seem to find out what gear oil to use. What weight should I use and what will be the best fluid to put back in? I was thinking Lucas gear oil. I looked in my repair manual but it didn't have a weight to put back in.

What signs of wear should I look for also while I have the cover off?

I have the Dana 61 rear end according to the door tag. Thanks.

I did a google search on the number listed above but nothing came up. I looked up the hypoid gear oil and I basically got a heavy duty gear oil because Hypoid is a type of gear.

How many quarts does it take and I assume 80w/90 will do fine?

EDIT:
Ok I just found out it was called SAE 90 but now the gear oil is called 80w/90.

How many quarts do I need to fill it back to the plug?

if it's an open diff the 80/90 will be fine. I can't remember how may quarts it is, but be sure to check it again after a couple of days driving, because some of it ends up at the ends at the end of the axle at the bearings.

Ok I finally found my answer to how many quarts and it is 3 QTs. Had to do some digging and a conversion calc to get it though
