F250 with 5.4 Overheating

Here is my problem. My truck overheated the other day and the antifreeze level was ok, so I replaced the thermostat. I got it replaced put antifreeze back in it, let it idle for awhile and then drove it around for 15 mins no problem. The next morning I drove off and it over heated again, but the thing is as soon as i vent the coolant tank and start the truck back up it show running normal on the truck and will not overheat again as long as im driving it. Everytime I shut it off and drive it again it repeats this.

I have no clue what to do. Is the new thermostat I put in bad?

What Year SD 5.4L do you own? Is it the GREEN or GOLD anti-freeze?

Do you actually see steam rising when your SD is overheating? If not, then I suspect the temp gauge is the problem.

It is a 2003 SD. Yes there is steam coming off the truck. It has the yellow/orange colored antifreeze.
