For short haul work the gasser will do fine. I've put a zillion miles on gas powered grain trucks that were pounded hard for three months of the year and they stud up. Don't expect economy as the norm is something like 6MPG. I would advise you to get a 4X2 or 5X2 if possible, not an automatic as it will be doggier. If you use it hard on a daily basis stick with a diesel.

LSchicago2 is new and has a neutral reputation at this point.
Years ago, A had a Chevy C65 with a 366 big block. It got 4MPG. You won't be saving any money on gas. I now have a 03 V10, and a 05 Diesel, both F450's. The Diesel costs 51 cents a mile, and the V10 costs 57 cents per mile for fuel. The 427 gas will use more fuel than the V10. LS

Did you mean 6x2? Not 5x2?

No, I was thinking about a 5 speed with a 2 speed rear end. A 10 speed road ranger would be nice with a small diesel or gasser...

I have a 1982 GMC 7000 Bucket truck with some type of GM BB motor either a 427 or a 454. it is thirsty to say the least, but I do have a constant weight with a non-split axle on it.

I also have a 97 429 F700 that I got dirt cheap off ebay. It has the 5+2 set up and it is stuck in low. I got 7 mpg stuck in low driving down Jersey from one end to another in morning traffic with lights. That is with nothing on it, not even a bed on the back.

A gas motor will have an insane rear end ratio of at least 5 something, maybe higher. I have seen GM trucks with a 7.17 or higher and some crazy 8 or 9 on eBAY.
