you mean something like this for the ipod part?

there are a few of those around, but for that kind of money and hassle, you're better off getting an aftermarket deck for a little more $.
as for hooking up an amp, again, you're better off getting an aftermarket deck; otherwise you'll need a line converter or to get an amp with speaker level inputs (which most nowadays do have, however, you'd have to wire the harness to get the speaker level signal to your amp, which is also a pain)
an aftermarket deck will often have rca inputs for an aux channel, and rca pre-outs for any kinda amp out there. Some of the decks even have USB slots nowadays, so you can run a USB thumb drive or small notebook hard drive off of them. I have a slightly older kenwood that does this, and it's a godsend IMO - I haven't burned a single cd in over a year.

Something like P.I.E.'s FRD04-AUX is actually pretty nice. It takes about 15 minutes to install. It plugs into the CAN bus port on the back of the stock deck. And, from there you just need to find a power wire to tap into & screw the ground wire to one of the fire wall grounds. The adapter itself provides the usual 2x RCA input for your device and an adjustable gain ****. Audio quality between a high quality MP3 (256Kbps or better) and the source CD are almost indistinguishable.

I think you're looking at two different animals, the ipod adapter and the break out, break in harnesses to add the amp. The RCA's on the ipod adapter are to get the ipod into the radio. That site also sells into vehicle and into radio harnesses that you could use to get to and from an external amp.
