05' Up SD gassers have weak aftermarket parts support when it comes to performance bolt-ons and the 08's are worse.
First off I wouldn't gut the cats. You have two of them on your truck and they really arn't too restrictive. They are expensive to replace if you have to.
Either build an exhaust yourself or go to an exhaust shop to get one custom bent. If you want duals a single in dual out muffler is best. (I'd go 3"in Dual 2.5" out) You can get a Flowmaster 2.5" Universal exhaust pipe kit for around $200 and that has a bunch of mandrel bends with it and is designed to slip together. Flowmasters pipes are good. The FM cat-back I have on my truck is a great system for the money.
An exhaust cut-out would be fun but you will lose low end power with it.

I just became the owner of a 2005 F250 SD with the 5.4l last week. The previous owner put duals on it from the cats, all the way back, with either Flowmasters or Dynaflows. I'm not sure which because I bought it from a Ford dealership, who had no clue. All I know is it sounds absolutely awesome!!!

I'd go with a flowmaster muffler with a 5" case like the 50 SUV or the 50 HD FM mufflers.
Gutting the cats is a bad idea IMO especially on a new truck, you have 2 cats to contend with. If you do gut the cats stick a piece of straight pipe through them, otherwise you will get turbulance.

I vote MagnaFlow just to be different and because of personal experience. Custom job at a muffler shop is best no matter what you go with. I like the nice firm sound of the MagnaFlow, very mature compared to some of the other mufflers out there. Quiet when you want it to be and plenty of sound when you put your foot into it.
Best fit in Magnaflow is the 24" long with 5" X 8" Oval with 3" single inlet and 3" dual outlet (Model # 12398). I prefer the 45 degree out behind the rear wheels. I had the dual straight out the back on my last truck and it was noisy with the trailer and a pain when hooking up as I kept getting exhaust blown in the face all the time.
