I think a 3" single exhaust would get you plenty of power and would cost less than a dual setup. Can't really say how much power you would gain, that mostly depends on the setup. There are quite a few good catback systems, maybe the manufacturers have HP claims. You could also build a good one. When you go to choose a system, you need to ask yourself some questions.
What kind of budget are you on?
How loud do you want it to be?
What kind of driving will you be doing? (towing, around town, long distance commute)
How much are you looking to gain?
Realize that some gains can only be had in conjunction with other mods, such as a good intake and headers.
