A limited slip really won't help you launch any faster, unless you're having traction issues from the start.
If you want a rear end setup that will launch really nice, start with the 9 inch and more than likely some 4.10 gears. That 302 will like to rep out, and makes power up high, so you want to keep it in the power band. Numerically higher gears help you here.
Next, you want to soften the rear suspension some. For a proper launch, you want it to squat in the rear, and then stay down while under throttle. You can accomplish this relatively cheaply by removing the lower leaf or 2 from your spring pack, and running a good shock with a fast compression and slow rebound.
Depending on your setup, you may want to run a ladder bar(s) with a slip joint or shackle to keep axle wrap under control.

78F150XLT is starting off with a positive reputation.
haha we all think of gears, but notice he has an auto tranny... throw in a 2800-3000 stall converter, 4.10 gears, and a spool (wat your axles though)
the 9'' was a good diff, look at what they run in stangs, all 9''s
If i was you, start looking at what guys in mustangs are running sicne you have the same powertrain set up as them...
