What bolts are you looking for exactly? The external bolts for manifolds, covers, etc...

I also am putting together an engine with a lot of the original bolts missing. Get yourself a drill and tap chart that lists the diameter of the hole to be drilled for the tap. I got mine at a local machine shop supplier. It's also nice to have to convert drill letter sizes and fractions to decimals. It's hanging on the wall of my garage. They also had a small card that Brown & Sharpe distributes. Then buy a inexpensive set of inside/outside calipers that measure in thousandths. Your local auto parts store might carry them or look in JCWhitneys (where I got mine, $20). For holes to be sized, measure the diameter of the hole with the calipers and then look up the tap drill size up on the chart. There is coarse and fine threads but most all are coarse. Just count the threads per inch if in doubt. For the depth, I am using a piece of wire bent at the end into a small J. I then rake the wire down the threads until I feel the last one, put my thumb flush with the surface and measure the depth with the calipers. Remember to add whatever the plate thickness is plus any washers. For the bolts, you can measure the OD and count the threads per inch. They also make a bolt card that is a plastic card with threaded holes in it to determine bolt sizes. My bolt supplier was out of stock so I'm guessing this is a popular item. Hope this helps.

All these bolts are coarse thread.

Valve covers:
(14)1/4x3/4

Water pump/timing cover:
(6) 5/16 x 4
(5) 5/16 x 1 3/4
(3) 5/16 x 2
(2) 5/16 x 3/4
(1) 5/16 x 2 1/4

Intake:
bolts(10) 3/8 x 1 3/4
studs(6) 3/8 x 2 3/8 with 5/8" threads on each end

Carb:
(4) 5/16 x length varies on carb/spacer combo

Thermostat:
(2) 5/16 x 1

Distribotor:
(1) 5/16 x 3/4

Fuel pump:
(2) 3/8 x 1 1/4

Oil pan:
(20) 1/4 x 3/4
(4) 5/16 x 3/4

Exhaust:
Manifolds (14) 3/8 x 1 1/4
(2) 3/8 x 1 7/8
Headers (16) 3/8 x 1

Exhaust manifold bolts may vary. These measurements are from my truck manifolds used on a 78 460 in an F-150.

As far as the P/S and alternator brackets go, it varies from engine to engine as to which vehicle it was used in. This list should get you started.
