I have a 97 f-250 4x4 7.3l manual. I want to change my front and rear diff fluids but I dont know what weight gear oil I should use.

75w140 synthetic in the rear diff, add friction modifier even though the fluid comes with it if you have limited slip.

80w90 in the front.

Three to three and a half quarts so you will need four.
