I run 180 deg stats in everything, regardless of induction, but coolant temp has little to do with intake temp, unless you're using engine coolant in your water to air intercooler (which I've done, but that's a tangent).
Your cats should not be plugged after 12K. Even the richest running gas-pig wouldn't do that.
Mine came with the stock lightning stat and its also a 180. Even if it was not the truck ran so good for so long, I have towed my 30' toy hauler in 90 deg. weather and the temp gage was normal. For the record the intercooler fluid is a seperate circut. For an experiment I am going to run purple ice coolant.

Also when we were doing the final street tuning the intake air temp floated between 120 deg. and 148 deg. tuner guy said that seemed high seeing how the temp out side was only in the 40s. The cams that were in the heads i bought were from LFP.They are a little hot for my use but my tuner guy got the idle about 85% smoothed out. I can say she screams.
