99-04 gas engines use the 4r100. 05 and up use the torque shift. 03 and up 6.0l uses the torque shift. the 7.3 used the 4r100. the motor will bolt to the tranny. the motor mounts are the same. the radiator is the same. need wiring harness, ecu and engine. the 6.8 is a 5.4 in every way, with 2 cylinders add on the front. they are both modular motors, which means most of the parts will interchange.

for the money your are looking at spending, unless you are getting a free or otherwise really cheap V10, i would consider the diesel conversion. i am currently looking into doing just that, after my truck just up and blew a hole on side of the block. i have driven an F250 with a V8 and i trully understand your reasons for wanting to upgrade.

its a 2000 excursion motor so Im guessing 2 valve?
diesel conversion is going to be 10x more
if all it is is a motor swap then its no big dealfor me.
diesel swap is far more expensive initially. just the motor cost alone
then plan on new gas tanks
fuel lines
water seperator
ecu
cab wiring + motor wiring
etc

Just to throw some figures around. I have a 2004 F-250 and am going to swap a 12 valve cummins in this summer. I average around 11 mpg with the 5.4. If I drive 18,000 miles a year(about right for me) and average 15 mpg with the cummins, I will save nearly $900 a year in fuel, even with diesel being .50 a gallon. I figure it will pay for itself in about 3-4 years. I've been looking for a while and a decent cummins motor up here is around $2,500-3,500 plus the small stuff. The more miles I drive, the faster it will pay for itself.
In the end, the V-10 really is no cheaper since the gas mileage will still be crap.

If you want to attempt a PSD conversion, AFAIK you will need a different transmission in addition to all the other supporting sysytems. It'd be a huge PITA, you'd priobably be money ahead of you just traded your truck.
A Cummins conversion is certainly a viable option. fordcummins.com and destroked.com are sources for parts and kits to make this swap.
I'm pretty sure the 2V V-10 blocks are the same. It's the stuff that gets bolted on that is different.
