Yes, the 100 amp panel will be just the ticket you need.
Then buy the breakers as the need comes. Or as you have allready designed.
The amount of breakers you add is not neccesarily the continuous load you will have.
For example you named off more than 100 amps worth of breakers, but not all will be working at the same time, i do not think you will be using 100 amps ever at the same time. So it will be good.
And as for the all metal stuff you want, that is all good too.

Well, I fixed the kitchen plumbing. Turned off the main water and put the water heater on pilot, pulled apart the above-floor union under the sink, and found two little patches of rubber someone had stuffed in there. The funny thing is, I found a scrap of rubber in the garage that had two small squares cut out of it. Looks like I found where those went.
And before anybody says it, I did put in valves above the floor, I cut the copper line and used 3/8" compression fitting valves, so no leaks, and I can do a proper shutoff.
I'm going to get some good measurements of the garage tonight and start working up a diagram so I can figure out what exactly I will need.

I've got the lighting diagram done in plan view, 12 fixtures off three switches on one circuit (should be ok, under ten amps if my math doesn't totally suck), another four fixtures off their own switch and circuit, and two outdoor fixtures on another circuit and switch.
I'm getting ready to do the elevations, a couple will be easy, but the north and east elevations are going to be a touch complex.

Man, you guys are brutal. Anyways, I've got it sorted out to ten circuits, five 20a, three 30a, and two 30a 220v. That includes outdoor security lighting, 16 overhead fluorescent fixtures, separate circuits for outlets on each wall plus two walls have two circuits each, all quad outlets, and so on.
Now i just need to scrape some cash together for all this stuff.
I know I -should- go all new, but what about used outlets and switches? I would of course inspect and make sure they are ok before use, probably be better than new chinese made stuff.

We are not saying to go all new. What should definately should be new is your service/subpanel in the garage. Reuse the recepts and switches that you have or you could use the new ones I have here in my garage. Same with the wire. Your choice.

I thought i was looking into the sears auto center. A tire hanging from the cieling, cans of lube everywhere, chains on the walls, something that resembeled a tire balancer and I think I saw a set of Battery core tongs.... I was freaked out when I saw the ball gag drawer. Lisa gets serious when she works huh?
