The swap is easy (from a 6 to 351w). My results were: better gas mileage, a cool V8 sound (headers and dual exhaust), and more buildable horsepower and torque. I swapped the 6 for a 351 and could not be happier. There are a couple of people who have done the swap and can help. Myself, slikness, and Hotwhlz85 have all done the swap.

Unless you go with a windsor rebuild the 300 it'll out work and run the 302. I would never swap a 300 for a 302 unless it was a efi roller motor. I had a 82 f150 someone put a 5.0 mustang engine in it and used a 4barrel carb and intake it was a dog.

If you only get 12 mpg with an EFI 300 there is something wrong. Even with bigger injectors, no EGR, etc. and over 220k miles I still average 15 driving like I stole it.
The 302 is no match for a 300. The 351 is iffy if you put some work into the 300. Plus, if you keep the 300 people think it's cool. If you do a 351 it's just another truck with a 351. Kinda like a street rod with a 350, everybody's seen it countless times and it isn't that cool anymore.

I just got back from the IRL race in Fort Worth. On the first leg of the trip from here to Ardmore(30 miles north of TX)I got right at 17 mpg driving into a stiff south wind at about 70 mph. On the second tank we went from Ardmore to the inlaw's house in FW, drove around for two days (including stop and go in race traffic), and then to just north of Denton and got about 17 mpg. From Denton to OKC I got 19.3. I gassed up in OKC and drove home and am still driving on that tank. I drive like a maniac. WOT all the time in town, rubber in first three gears, powershifting, etc. Something is wrong if you can't get at least 15 mpg with a EFI 300.
BTW, I'm in the Tulsa area.
