If they have been in there a long time Tapping is not gonna cut it.
To make the job goe easier I use a 3# sledge hammer. and a solid chunk of round steel to remove mine.
sometimes if they are real bad torches help by heating them up. Just do not melt them.

u-joints
If you already have the driveshft out. The u-joints have to be pressed in and out. You can either press them using a vise and some sockets or just take it to your parts dealer and they can do it for you for a price. I think $20 not to sure on that. I change them myself.
But if your talking about getting the drive shaft out. I use a pry bar and wedge it in between the u-joint and yoke. With some muscle they pop right out. If its still stuck hit the pry bar with a sledge hammer instead of just hitting the u-joint. because if you missed you could break off an ear.
