Trevor, let me be the first to welcome you to our family of list members. You are welcome to post your Ford questions here and we will try to help you. Them other brands are not exceptical talk here.
You own the second year of the twin I-beam suspention. All 65-79 from cab forward are bolt up exchangable. If you really like your 66, then start looking for a donor truck to buy that you can get the power disc brakes and steering, engine and tranny from. There were no car style 4 speeds offered in the trucks. The trucks have a 3 speed with a granny low, and I doubt that you want to go there. Automatics will also work in you truck well. When you find the engine that you want, then just go from there.
I first would suggest a 390 for your engine, but a more modern 302 or 351W would be a good choice as well.
Let us know what kind of budget that you have to work with and we will try to offer a bucket full of advice. That is plentiful here. :-)

Trevor.
Let me be the second to welcome you to the FTE family. John is correct again, the 390 is perfect for your truck. However, a car 4-speed will fit in your truck. I know because I am just taking one out of mine. [Automatics get really attractive when you reach the advanced age that John and I are at now ]
A couple of years ago, Classic Trucks ran an article on converting a top loader to a floor shift using a Jeep T-176 top shifter plate and lever on the big Ford top loader 4-speed. I think the article can still be found and it looks bitchin, not to mention you have the modern, good shifting 4-speed transmission.
I don't know if you are interested, but I am going to sell mine with the 390 bell housing, flywheel, new clutch, pressure plate, throwout bearing, new trans-adapt crossmember, etc.
If you or anyone else is interested in how to do this conversion or want a price on my unit, e-mail me at skip4274@flash.net
I'll be happy to tell you how to do it or give you a price on the one I have.

Well it looks like you put a goodly amount into a truck needing a lot of work. I'm afraid you may not understand budget. It doesn't matter how hard or easy something is if you don't have the money to spend on it. If you have another $2000.00 to spend on your truck you can take one path, if you have $5000.00 another path, $750.00 yet another. We can help if we know which direction you wish to go in.

I have enough money to fix it right, I figured it would cost me about $5000.00 to $ 8000.00 do fix it now how fancy I get with the engine or other
parts will depend on how much every thing else cost. my plan was to start with the basics, but while I'm at it try to find out about front ends and drive train so I can see where I'm at.the truck already has disk brakes but I don't know what there off,the frame is solid, and everything
works.
thanks again

In the 61-66 f series forum on joey's page (Under bookmarks) he has sallisaw show pictures with a section 61-66 f10's. in there is a 62 f10 unibody with 65 twin i beam suspension, to replace the original straight axle. Can someone tell me how tough this converision is and if any twin I beam up to 79 can be used? also can these trucks be easily converted to power steering?

I dont remember whether you said if the truck was a shortbed or not. I have a 66 F100 shortbed I6 with 3 on the floor, but I like the six.... Anyway, on to better things. I dont know where you are located, but I think you said the body was in pretty sore shape. A 65 shortbox, 352, 4 spd w/ granny low just came on the market around the corner from me (I'm in Sacramento, CA) and the guy is asking $900 for it. The truck doesn't run, has been sitting for a long time, but is remarkably straight. I dont know what parts you need, but the hood is good, the bed sides are good, the tailgate is good, the front and rear bumpers are good, the passenger side door is good, the dash is good (its a regular cab not a custom). Its got the earmarks of a fine parts donor and if you're interested the guy will probably take half what he's asking for it. I'd go for it but i'm in college and the payroll's real short right now. Anyway, just letting you know of a possible parts donor.
