I had a 390 in my truck. Converting to a 300 has made me very happy. I have the larger valves in my head, and some other mods, and I believe it is quicker than the stock 390 was with a 2v carburetor.
Note: As a boy I drove my CJ5 into an irrigation reservoir, and it sank up to the axles. I had to be towed out by a tractor ... yep, a tractor with a 300 in it.
When most people think of a 300, or an inline 6, they remember grannies' Falcon, or some other gutless car. For that reason I have a photo from Clifford Performance's 'site, of a 300 beast:

Even when I was a Chevy guy the 300 always commanded respect from non Ford truck guys because of its wide application in the agriculture and industrial field. The 300 was used in F600 chassis and plane tractors too.
Three years ago I pulled my 4500lb fifth wheeler into a campground and after I was setup two guys came over and asked what was under the hood of my 95 F150. I responded that it was Fords "tower of power", One guy smiled, offered me a beer and the other pulled out a twenty and slapped it in his hand. Both guys were driving late model Chevies as their tow vehicles.
The 300 is probably the most respected gas inline six ever although some would argue for the AMC 4.0, Mopar 225, GMC 302, and I had a fondness for the old Mopar flatheads, but the sheer number and length of service of the 300 I think makes it #1.
Anyone that suggests that a V8 is always better than a six is misinformed.

I would love to have an older truck with the 300 I6 they are great TRUCK motors. Unfortunately I need my truck to be a car/truck/suv at this time. One day I would like to replace it with a work truck and small car. Then the number 2 requirement of that truck will be the 300. Number 1 being 4x4 for me.
