I did it the low $ easy (for me) way; like most, my pedal was too far to the left, so I took off the existing rubber pad and bolted a 3/16 or 1/4"? extension piece of flat steel to the existing pedal with 2 good size short bolts. Is is the height of the old pedal but longer on the right side, of course.

I then customized the extension to just the right distance from the gas pedal, notching a little around the column, etc. and covered the extension piece with a tread piece from an old dirt bike tire and tied this to the extension with a bunch of thick black plastic ties.

Great surface, fits the extension perfectly, and you can't see the ties since everything is black and it isn't going anywhere. Won't win a prize but works extremely well, is cheap, and can be modified at any time if necessary, as in if you change your gas pedal linkage, which I did.

Mine is not so far to the left that a right footed braker could not reach it or would have to search for it. The pedal hangs just to the left of the column but the width of the pedal is enough to center it under the column. I have had to make a few panic stops over the years and have not had a problem with using the "correct" foot. The worst I could imagine if "muscle memory replaces thinking" is that both feet would hit the pedal. That wouldn't necessarily be a bad thing...
