use a 360 crank and 390 pistons and rods when doing a rebuild?I guess what I am asking is what is the difference between a 360 and a 390 crank?

No, you can't. The 360 already has low compression. Put 390 rods and pistons in it and you are at about 7:1 or less with a whole lotta quench area. It wouldn't run very well.
if your going thru the trouble to change out everything else why not change the crank?, check your local machine shop, i got a 390 crank for 40 bucks because someone never came back for it. the shop owner was glad to sell it to me for what he had in it.
